Black bean soup.

Ingredients

1 Tbsp. olive oil
2 cans black beans (drained)
2 cloves garlic (minced)
6 Tbsp. canned tomatoes (chopped)
2 tsp. fresh ginger (grated)
1 'squirt' fresh lime juice
2 cups water (or more, to taste)
salt (to taste)
sour cream* (optional)

Instructions

Heat the olive oil in the pot on med-low heat. Add minced garlic and heat until the aroma comes out (about half a minute). Add chopped tomato and stir until mixed well. Heat until tomatoes are warm. Add beans, water and grated ginger and stir until hot. Remove from heat. Insert hand mixer and blend. Put pot back on heat and add more water to taste (depending on whether you prefer your soup to be thick or thin). Add salt to taste. Remove from heat and add a small squirt of fresh lime juice. Stir. Serve in bowls with a tablespoon of sour cream (optional).
