This chili is perfect for a winter night and can be made in a flash! I got this recipe from my Grandma Bea and tweaked it a little. I always serve this with cornbread. Leftovers freeze perfectly as well.

Roasted butternut squash soup

While a little labor intensive, this soup is delicious and inexpensive to make. A friend of mine swears it has restorative powers. Maybe it's because butternut squash is a good source of fiber, vitamins A and C, and beta carotene. It's also low calorie. If you're watching your weight, it's only has 2 Weight Watchers per cup.

Butternut Squash Soup with Pancetta and White Beans

This filling but light soup is a great way to get kids to eat veggies! The first time I made it, we told my daughter it was "butter squash," and since she loves butter, she ate it up, figuratively as well as literally. I don't usually care for canned anything in my recipes, but the canned veggies in this soup make it so easy to make, without sacrificing flavor or nutrition, that it's worth bending the rules. Make life easier still by buying pre-cut butternut squash. If you're lucky enough to live near a Trader Joe's, they sell both the cut squash AND cubed pancetta in a 4-oz package. Can't get much more simple than that!

Red Lentil Soup

This red lentil soup is similar to a split pea soup but not as thick. Red lentils are much smaller than brown lentils and can be found at Whole Foods or Indian groceries. The mild, creamy flavor of the soup makes it a hit with even the pickiest children. It is a great soup to make with a friend – it’s quick, can be made easily in bulk & freezes well. For a more grown-up taste, feel free to spice it up with some curry powder.
