Delicious Salsa

Yield: makes 2 cups

Great tasting salsa and that can be spiced up or kept mild.

Ingredients

1/4 cup chopped onion
1 clove garlic, chopped
1 14 oz can diced tomatoes
2 serrano chilis, stems removed and chopped (use less or omit to adjust the spice level)
1 red jalapeno pepper
2 tomatoes
1/8 tsp cumin
1/8 tsp sugar
1/4 cup chopped fresh cilantro

Kitchen Items

Blender, knife, cutting board, oven

Instructions

Preheat oven or toaster oven to 400 degrees. Once the oven is warm place the red jalapeno and one of the tomatoes on a cookie sheet and roast for about 10 minutes. Put the onions, garlic, can of tomatoes, serrano chilis*, one of the tomatoes, cumin, sugar and cilantro in the blender. Add the roasted jalapeno and tomato then blend to the desired consistency.

*use less or omit to adjust the spice level.
