Couscous
Prep time: 5 minutes
Yield: 6 c., or 4 side dishes for adults and 3 main dishes for kids (with plenty left for seconds)
I love couscous because it only takes 5 minutes to prepare, and it produces a large quantity of food. This recipe makes a great side dish at family meals or a main dish for kids. Serve with tabasco if you like a little kick to it.
Ingredients
2 c. of coucous, wholegrain if available
4 c. of broth
1 red pepper, de-seeded and choped
2 baby onions (or scallions), chopped
Handful of chopped parsley and / or coriander
Dash of tabasco for the adult dishes
1 can of chick peas (also called garbanzo beans)
Handful of black olives, sliced or chopped
Kitchen Items
1 sharp knife, 1 chopping board, and one can opener
Instructions
Mix everything together except the broth and the herbs.
Separately, boil the broth. Add the broth to the bowl of coucous, and cover it with anything, even foil. Leave to sit for five minutes.
Uncover, and leave it sit another five minutes. Add the chopped herbs on top, give it a good stir with a fork to fluff it up a bit.




My son is so picky that if he doesn't think he will like it, he wont open his mouth. I can't even get him to eat sweet fruits because its cold. I will have to give this a try. Sounds like my picky son will love this.
