Yummy egg salad for those days you just want something easy. We all love it!

Ingredients

6 Eggs (Large or Extra Large Size)
4 Tbs. of Mayo
Salt
Pepper
Paprika

Instructions

1. Place all 6 eggs into a pot filled about halfway with cool water.
2. Place pot on stove top at about medium high heat. Bring to a rapid boil, then turn the stove off. Let the eggs continue to sit on the stove top for 15-20 minutes.
3. Remove eggs from the pot, run cold water over them, then peel the shells off.
4. If you have an egg slicer use it, otherwise finely chop the eggs and add them to a bowl.
5. Add about 4 Tbs. of Mayo (not salad dressing) to the eggs.
6. Add salt, pepper and paprika to taste and mix all ingredients.
7. Serve on toasted bread of your choice or add to a mixed green salad and enjoy!
