Moroccan Couscous Salad

Yield: Serves 4

Perfect with lamb, chicken or fish dishes - or just by itself! Very flavorful and colorful! Great one for a large group!

Ingredients

2 cups couscous
2 cups water or stock
1 tblsp olive oil
2 cloves of garlic, crushed
1 red onion, chopped
1 tblsp Moroccan seasoning
1x425g/15 oz can diced tomatoes
1/2 cup sultanas - raisins
rocket or mixed salad leaves to serve
1/4 cup flaked almonds, toasted
parsley, chopped

Kitchen Items

1 large bowl 1 fork 1 frying pan

Instructions

Place couscous in a large bowl. Prepare following packet directions using water. Fork well when all liquid is absorbed. Set aside.
Heat oil in a frying pan. Saute onion and garlic until onion is tender.
Stir in seasoning. Cook for 1 minute. Blend in tomatoes and sultanas.
Bring to the boil. Reduce heat. Simmer, stirring, for 5 minutes.
Fork tomato mixture through couscous. Serve with salad, topped with almonds and parsley.
Note: Vegetable or chicken stock is suitable for this dish.
