Your Kitchen Pharmacy--Beets Are Your Buddies

Red beets have been known as powerful food and medicine for many centuries. Ancient physicians knew them for healing intestinal complaints, anemia, fever, nettle rash and many other ills. Our great-grandmothers, grandmothers and mothers knew about health benefits of beets too. Modern science has confirmed what the ancients knew--that beets, preferably organic, contain a number of biogenetic acids which increase peristalsis of the intestines, betain, which helps break down protein, and also helps form choline, which improves liver vitality.

Want to keep yourself and your family healthy and prevent illnesses? Make 1/2 glass fresh beet juice mixed with 1/2 glass of fresh carrot and improve your metabolism. "Red Wheels" is an easy-to-make, absolutely fabulous and nutritious salad that you can include in your lunch or dinner menu.

* Cook two medium organic red beets (skin on) in two cups water until soft. Cool, peel and grate them. In a bowl, combine the beets with two cloves crushed garlic, two tablespoons chopped walnuts and a pinch of sea salt. Add two tablespoons organic nonfat sour cream, vegetable mayonnaise or olive oil. Mix the salad and enjoy!

Steak salad

Broil or cook a London Broil Steak in the crock pot. Place your favorite herbs and spices on it. Create a salad of your choice. Cook waffle fries per packaging instructions. Make salad. Top with fries and thinly cut steak. Eat with dressing of choice. My kids love it and it is good! Pretty healthy too because your really only get 4 or 5 waffle fries. You'd probably eat more on the side.
