I recently bout a bag of fresh frozen fruit... it's great! And this led me to look in my frige for some already made yummy stuff I could throw together for a quick, but nice, breakfast! I came up with something fabulous and healthy!
Eggs, creamy sauce, crunchy bread, and... salad!
Breakfast has never had it so good

Yield: 
1 delicious serving
Ingredients with measurements: 

1 Tablespoon mayonaise
1 teaspoon french mustard
1 dash of pepper
1 splash of lemon juice

1 large egg
1 pan of simmering salty water

1 slice whole wheat bread
1 handful of baby mixed greens

Instructions: 

5 minutes

1 small pan
Toaster
Spatula
small bowl
Fork (to stir sauce and to eat with)

Combine first 4 ingredients in a very small bowl and set aside.

Gently swirl your just bubbly water and carefully add egg
Meanwhile, put your bread in the toaster

When toast is done, place it on a plate.
Top Toast with salad (scrunch it up to make it less fluffy)
Top with poached egg
Finish with sauce

This is an amazing breakfast and super fast! It's great paired with a side of fruit! Whata nutritious and delectable way to start your day!!!

This sounds delicious and like a fabulous "mom" breakfast to throw together when you're scrambling some eggs for the bambino (or you could serve him/her a poached egg since you've already got the water going). Very good balanced nutrition too, lots of good energy to start the day.
