Not Homemade Ricotta Ice Cream
My Aunt Caroline must be turning over in her grave as I share my recipe for not homemade (Did I mention effortless and fool-proof)? ricotta ice cream.
1 pint (2 cups) premium vanilla ice cream
1 1/2 cups ricotta cheese (not low fat)
1/2 cup honey
3/4 cup toasted sliced almonds
20 minutes non-active; 10 minutes active
glass bowl, food processor, wooden spoon
1. Place ice cream in a glass bowl and let it stand at room temperature until it just begins to soften.
2. In a food processor, blend ricotta and honey until smooth.
3. When the ice cream is soft enough to blend with the ricotta mixture, pour the cheese over the ice cream and stir together with a wooden spoon. Work quickly, the honey may harden and sink to the bottom, so make sure you mix it well.
4. To serve, scoop into ice cream dishes, and sprinkle with toasted almonds.
