Nanaimo Bars

I'm from CT and my husband is from OR with lots of family in Canada. He introduced me to a Nanaimo Bar (named after a city on Vancouver Island)while we were having snacks on a ferry trip in Canada(before kids). I'm a real chocoholic and I had never had anything like this creamy, crunchy, chocolatey treat! YUM! I have been preparing this easy bar dessert ever since and my husband always requests Nanaimo Bars for his birthday. My daughters love them, too!

Yield: 
36 Bars
Ingredients with measurements: 

1 Cup plus 1TBSP. Butter, divided (Set aside 1/2 cup to
become room temperature for Step 2)
1/4 Cup Sugar
1 Egg
5 TBSP. Cocoa Powder
2 Cups Graham Cracker Crumbs
1/2 Cup Flaked Coconut
1/2 Cup Chopped Nuts(such as Hazelnuts,Pecans or Walnuts)
6 TBSP. Milk
4 TBSP. instant vanilla pudding and pie filling mix
4 Cups Confectioners' Sugar
6 oz. Semisweet Chocolate Chips

Instructions: 

30 Minutes

Double Boiler, 13in. by 9in. by 2 in. baking or glass pan, mixer.

1)In the top of a double boiler, combine 1/2 cup butter, sugar, egg, and cocoa. Place over boiling water and stir until the mixture resembles a custard. Remove from heat and add crumbs, coconut, and nuts. Spread in a buttered 13in.-by-9-by 2in. baking or glass pan. Press down to form an even layer. Refrigerate.
2)In a medium bowl, combine 1/2 cup butter, milk, vanilla pudding mix, and confectioners' sugar. Beat to a smooth mixture. Spread over the crumb base in the pan. Refrigerate again to firm the 2nd layer.
3)In the top of a double boiler over hot water, melt the chocolate and the tablespoon butter. Spread over the confectioners' sugar mixture and again refrigerate. Slice into bars after top chocolate later is firm.
