Rice dish with beans and vegetables
Kids like rice dishes. This is a tasty one that also serves as a main meal. Stir in some cooked chicken, egg, salmon, or different kinds of beans if you want to vary the recipe. It freezes well so cook extra portions.
Ingredients
2 cups basmati rice
4 cups of vegetable broth
1 large peeled and finely chopped zuchini- they will never even notice it!!
1 can of butter beans
1 carrot, peeled and chopped - optional for some color
1 handful of chopped mushrooms,chestnut if available - optional
Kitchen Items
a pot with a tight fitting lid
Instructions
Bring the rice, vegetables, and broth to a boil.
Reduce to a simmer and cook for forty minutes.
Check to be sure the bottom doesn't burn.
When it's finished, stir in the beans.

Freeze leftovers in small portions so you don't have to reheat more than you need.
