Ratatouille

Prep time: 10 minutes to put together - 30 minutes cooking time
Yield: 4 - 6 servings

A vegetable dish children love. Have they seen the movie?

Ingredients

4 medium sized ripe tomatoes
1 large onion
3 small to medium sized zucchini
1 medium eggplant
1 yellow, green, mixed or red pepper
1 or 2 carrots
2 stalks of celery
3 tbsp olive oil
1 clove garlic, crushed
1/2 tsp dried oregano and parsley or italian seasoning
3 oz. tomato paste
salt and pepper to taste
basil leaves, ripped into small pieces

Kitchen Items

2 heatproof bowls cutting board and sharp knife large saucepan with cover long wooden spoon

Instructions

1. Cut a slit into the bottom of each tomato. Put them into a heatproof bowl, then fill a second bowl with cold water.
2. Cover the tomatoes with boiling water. After 2 minutes, use a spoon to put them into the cold water for 2 min.
3. Lift the tomatoes out, peel them and cut them into quarters. Peel the onions, cut them in half, then chop them finely.
4. Cut the ends off the zucchini, carrots, celery stalks, then cut them in half lengthways. Cut into strips, then into chunks.
5. Cut up the eggplant in the same way. Cut the ends off the pepper and remove the seeds. Then, cut it into thin strips.
6. Put the oil and onions into a large saucepan. Cook them on low heat for about 10 minutes, until the onions are soft.
7. Add the vegetables, garlic, seasoning, tomato paste, salt and pepper to the onions in the pan. Stir everything well.
8. Cook the ratatouille on medium heat for about 3 min. Then, turn down the heat, so that it is bubbling gently.
9. Put a lid onto the pan. Cook the ratatouille for 20 minutes, then remove the lid and cook it for 10 minutes. Stir in the basil.

Mix with grilled meat, cooked ground beef, scallops or fish

This is my updated version of one seen in wipe clean flashcards on 30 Healthy Things to Cook and Eat. It's great for teaching children about cooking. The recipes are easy to follow for children. It has pictures to go with the step by step instructions so that they could look at the pictures and do it themselves. Every child needs to learn to cook. Even boys.
