Ground meat with vegetables
Prep time: 30 minutes
Yield: 6-10 servings; when rolled in egg wrapper 15-20 servings
Feeding kids is a challenging task, especially when vegetables are around! To help you feed yours with veggies, you might want to try this recipe.
Ingredients
1 kg minced/ground pork - you may want to use chicken sometimes
2 pcs large carrots, shredded
2 pcs potatos, shredded or cut into very small cubes
2 pcs red bell pepper, minced or striped
a handful of raisins
shredded cheese, optional
a clove of garlic, minced
1 big onion, chopped into small pieces
1/8 cup of coconut or olive oil
iodized salt or fish salt, whichever is available

Instructions
1. Rinse the meat with water, then set aside.
2. Saute garlic in oil, occasionally turning it until it is light brown and the smell is coming out. Add the onion and wait until it's cooked.
3. Add the ground pork. Mix and cook it until the juice is coming out and the meat is already light brown and being cooked in its own oil.
4. Add the vegetables and cheese.
5. Sprinkle with salt or fish sauce to taste.
6. Serve with rice.
Optional:
To hide the veggies from the kids, you may want to roll a tablespoon of the dish in a "lumpia" or egg wrapper. Seal it with a teaspoon of cornstarch dissolved 2tablespoons of water. Then deep fry. Serve with tomato catsup dip or mayonnaise dip.
