eggplant parmeasan
Prep time: 1/2 hour, or so mostly just the time it takes to fry th egggplant
Yield:
many people who say they don't like eggplant like mine and ask for the recipe..it's pretty easy and has alwasy been a great hit pot lucks
Ingredients
1 or 2 nice size eggplants
1 bag mozzerella cheese
2 cups parmesan cheese
1 jar tomato sauce
olive oil
1 can itlian bread crumbs
3 lg eggs
Kitchen Items
frying pan baking pan, usually 9x11 glasses baking pan works
Instructions
one or two egg plant fairly big in size.
slice them thinnly, the thinner the slice the better the taste.
dip the eggplant into egg and itlian bread crumbs, then litely fry the egg plant, in olive oil with frying pan.
set aside.
then in baking dish place eggplant piece down in one layer. then layer some tomatoe sauce ( any kind works I usually use something that has a garlic flavor) then sprinkle some mozzerella cheese and parmeasan chesse.
Repeat layering until the pan is full.
place in oven @ 350 and bake until the chees is melted.

Eggplant doesn't get enough attention! It's awesome. I prefer provolone to mozz, though.

PermalinkThat's exactly how I make mine. It comes out great every time. I love it this way. I like it with mozzarella and parmesan, but I'll try the provolone next time.
I love eggplant. It's great cut in strips and dipped in egg and breaded and deep fried quickly like zucchini sticks.
