Chicken Curry - not spicy at all
Delicious chicken curry recipe that can also be a freezer ready meal. Not spicy at all!!! I found this recipe years ago on the internet when trying to make some freezer food for a friend that just had a baby.
Ingredients
1/4 cup of olive oil
1 cup of celery, diced
1 cup of onion, diced
1 green apple, diced
2 cups of cooked chicken cubed ( I like to season with garam marsala when baking my own)
1/2 cup of flour
3 cups of chicken broth or stock
2 tsp of curry powder
1/2 tsp of paprika
1/4 tsp of garlic powder
1/2 tsp of soy sauce
2 cups of basmati rice, or whatever kind you choose
Kitchen Items
chopping board, knife and big saute pan
Instructions
Saute celery, onion and apple in olive oil until tender, about 10 minutes (if freezing 5-7 minutes. Add flour and coat veggies and continue to stir for 1 minute. Remove pan from heat and add Chicken Broth, stirring until completely blended. then add curry, paprika, soy sauce and garlic powder and stir well. Then add cooked chicken and salt and pepper to taste. If freezing just put into freezer ready ziploc bags, if enjoying now, just pour over rice. I have also on occasion added in frozen peas and carrots when adding the chicken and let simmer a bit to defrost them. Also remeber to start your rice when you start sauting, so it will be ready at the same time.
If you freeze, when you are ready to eat it, just defrost bag and pour into a sauce pan to reheat.
