Roasted Butternut Squash with Avocado Mash (the perfectly balanced meal for your 9+ baby or toddler!)
Prep time: less than 10 min
Yield: about 7-8 oz (a hearty and perfect big little meal for your big little eater!)
This happens to be my 10.5 old baby Nathaniel's favorite meal! It's rich, sweet, buttery taste is sure to have your little one's pallate dancing! Note: Since Avocado browns fast, be sure to combine both ingredients as soon as they are both ready. Discard left overs.
Ingredients
4 oz. homemade roasted Butternut Squash (Jarred squash is ok too)
1 ripe Haas Avocado sliced in half, only half is needed.
Kitchen Items
a fork for mashing Avocado 2 small bowls for containing both ingredients
Instructions
If you already have roasted squash stored up in your freezer like I do, just thaw out about 4 oz (3-4 cubes) in your microwave so it's finishes at the perfect temperture (not hot!). If not, the jarred version will suffice but I have to say, homemade butternut squash has a sweeter flavor. Set aside in a small bowl and cover with plastice wrap. Take one ripe Haas Avocado, and slice in half. Use the half without the pit for convenience. You will only need half of it, so store the other half (Keep the pit in place to reduce browning) in the fridge for later use or for the next day. Then, with a fork, mash the avocado to your baby's liking. By this stage, My 10.5 month old likes it super chunky, but it's up to you! If he/she prefers a smoother mash, just keep mashing! Once you have that down pat, blend both of ingredients together and THERE YOU HAVE IT! The Butternuet Squash is very sweet and savory, while the Avocado is also sweet and buttery. Naturally both ingredients mesh very well and compliment each other nicely. I never fail with this recipe, he gobbles every last bite ALL THE TIME. You can be rest assured that your baby/toddler is getting the perfect balance of both veggies, and fruit! Remember, Avocado is considered a fruit and is actually in the "Berry" family! Interesting! The Avocado is considered natures perfect food! Look it up yourself! Until then BON APETITE!
