Quinoa with apple, celery, carrot and walnut

Prep time: 5 mins
Yield: 3 c., serves 2 kids generously and one hungry mom

Kids love this grain dish, it's very colourful with a hint of sweetness from the apple. Leave out the nuts if you have any nut allergies. Quinoa is very simple to cook and it's quick as well, ready in 25 minutes!

Ingredients

1 cup of quinoa
1 apple, peeled and chopped
2 celery stalks, chopped into small pieces
1 carrot, grated or chopped
1 handful of walnuts
1 Tbsp olive oil or vegetable oil
2 cups of vegetable broth

Kitchen Items

1 sharp knife, a peeler for the apple, a grater, a chopping board, and a pot with a tight fitting lid

Instructions

Bring all ingredients to a boil. Reduce to a simmer, and cook for 25 minutes.

Voila! Dinner is done!

You can substitute peeled, chopped zuchini for the celery.
