Quinoa (a grain) with carrot and celery
For a nice variation on rice, try cooking up quinoa (pronouced Keen wah) instead. It goes really well with celery and carrot, so it's a great way to get some vegetables into the kids!
Ingredients
2 cups quinoa
4 cups of vegetable broth
2 stalks of finely chopped celery
2 carrots, peeled and chopped
1 can of canneloni beans, optional
Kitchen Items
1 pot with a lid
Instructions
Bring the broth, quinoa, and vegetables to a boil. Reduce to a simmer for about 25 minutes, then remove from the heat for another ten.
Give it a good stir and add in beans at this point if you like. That's it!
It freezes well.
