Egg fried rice with vegetables

Prep time: 10 mins max
Yield: 5 cups

A great dish kids love, and it's so easy to make!

Ingredients

2 cups basmati rice
1 can of coconut milk
3 cups of water or vegetable broth
2 eggs
1 cup of frozen mixed vegetables (purchased from your supermarket)

Kitchen Items

1 large pot with a lid

Instructions

Bring the rice, coconut milk, water, and vegetables to a boil.
Simmer for 40 minutes.
Separately, scramble and cook two eggs.
Once the rice is finished, drizzle some oil on top so it doesn't stick.
Stir the scrambled eggs into the pot.

Freeze the leftovers in small portions.
