Gizmo's Tacos w/Homemade Pico
Homemade tacos from scratch! Full of flavor&yumminess.
Looks like a lot of work, but it only takes me 30 minutes to make.
1 2lb. pkg. of GROUND TURKEY *Can be substituted with beef, but beef gets really oily*
1 Can BLACK BEANS Drained
1 Large ONION Chopped
2 Cloves FRESH GARLIC Chopped
SEASONINGS (I season to taste, so these are estimates):
1 Tbsp. SEASONING SALT
2 Tbsp. GARLIC POWDER
2 tsp. ONION POWDER
1/2 tsp. CAYENNE PEPPER
1 tsp. CRUSHED RED PEPPER FLAKES
2 Tbsp. or more of GROUND CUMIN
5-6 Dashes of HOT SAUCE (I use Red Hot)
8-10 SOFT FLOUR OR CORN TORTILLAS Small ones (La Bandarita is best)
3 Leaves of LETTUCE Chopped
1 Block of MILD CHEDDAR CHEESE
CILANTRO Pulled off Stem
PICO:
1 Small ONION Chopped
5 ROMA TOMATOES Pitted&Chopped
2 FRESH LIMES Squeezed or 1 Tbsp. Plain LIME JUICE
1/4 tsp. SALT
1/4 tsp. PEPPER
2 Dashes CAYENNE PEPPER
1 deep skillet, 1 reg. skillet, stir spoon, kitchen knife, cutting board, cheese grater, napkins, small mixing bowl
TACO MEAT:
1. In deep skillet put in turkey meat, garlic, and onions. Cook about 3 minutes on medium - high heat until the meat starts to brown.
2. Keep cooking and mixing in between adding in each seasoning one by one.
3. Add hot sauce.
4. After all meat is brown, reduce heat to medium - low and add black beans. Mix together.
5. Remove from heat and set aside.
TACO SHELLS:
6. Add about 1/2 tsp. Olive Oil to a separate skillet and heat on Medium.
7. Place tortilla flat in pan until warm, then flip. When other side is warm tortilla should fold in half with ease. Once folded, cook both sides until brown and semi crispy.
8. Remove tortilla from pan and place on a plate with a paper towel or napkin on top for oil to drain. Repeat steps 6-8 for all tortilla shells.
PICO DE GALLO:
9. In small mixing bowl add all ingredients together and mix.
TACO PREP:
10. Add taco meat w/black beans to shell. Just enough to cover the crease.
11. Add desired amount of grated cheese on top of meat.
12. Add desired amount of cilantro.
13. Add chopped lettuce.
14. Add pico mixture on top.
*For extra kick add jalapenos or extra hot sauce to taco.
*Side with refried beans&Spanish or Mexican rice, or sauteed or grilled veggies sprinkled with red pepper.
