Yield: 35 medium size cookies. 50-60 small cookies

These cookies are nutritious, delicious and vegan. Packed with protein and good-for-you fats, you will be surprised by how yummy they are. This recipe makes a large batch, plenty to share with family and friends during holidays. I received this recipe from a friend a few years ago and make them annually at Christmas time.

Ingredients

Wet ingredients:

2 cups tahini (can substitute peanut butter or another nut butter)
1 cup honey
1 cup safflower oil
1 tablespoon toasted sesame oil
1 tablespoon vanilla extract

Dry ingredients:

1.5 cups sugar
3.5 cups all purpose four (or substitute whole wheat flour for half)
1 tablespoon baking powder
1 teaspoon salt
.5 cup flax seeds
.5 cup coconut flakes
1 cup pumpkin seeds
2 cup chopped dried apples
1 cup raisins
.5 sesame seeds
.5 sunflower seeds

Kitchen Items

1 large mixing bowl 1 medium mixing bowl cookie sheets

Instructions

Preheat oven to 325 F. Mix wet ingredients together in medium bowl. Mix dry ingredients in large bowl. Stir wet ingredients into dry ingredients. Mix until well combined. Spoon onto cookie sheets. For large cookies use tablespoon, for small cookies use teaspoon.

Bake 12-15 minutes. Allow cookies to cool for a few minutes before removing from sheets. Cool cookies on cooling rack or counter lined with dish towel.
