Caribbean Chicken
This is a great summer dish with a lot of flavor. You can also add fresh mango slices, and it would be great with a lime slice and some fresh cilantro.
I only do by taste, so please excuse this. My measurements are only guesstimates. You can add or subtract as you see fit.
4 Chicken Breasts
3 c. Malibu Rum
2 cans Chunk Pineapple
2 onions, chopped
2 jars Peach Mango Salsa
1 bottle Italian Dressing
1 can Pineapple Slices
1) Marinate chicken with rum, chunk pineapple, onions, 1 jar peach mango salsa, and Italian dressing for a min. of 1 hour.
2) Grill Chicken until no longer pink (grill pineapple slices as well)
3) You can also bake chicken in oven at 350 for 40-45 minutes or until
juices run clear (keep chicken in marinade to maintain juiciness)
4) Serve with grilled pineapple slices and peach mango salsa; great with yellow rice
