Quick & Easy Bruschetta
Prep time: 10 minutes
Yield: makes about 25-30 appetizers depending on loaf size
A quick & easy appetizer to bring to any friend/family gathering or party.
Ingredients
1 - fresh baguette loaf, sliced into 1/4 inch slices
1 - 7 oz container of fresh pesto spread
1 - 28 oz can of diced tomatoes
1 - 16 oz package of shredded mozzarella
1 - can of olive oil spray
Kitchen Items
cookie sheet, strainer, bread knife, spoon
Instructions
Turn oven on to the Broil setting. Make sure baking rack is in the center position to prevent the bread from burning.
Slice the baguette into 1/4" inch slices. Lay them out on a large cookie sheet. Spray each with a quick spray of the olive oil.
Put in oven 3-5 minutes until slices are a light golden brown. [Be sure not to leave in too long as edges will darken when baking.] Let cool.
Strain the juice off of the tomatoes.
Spread the pesto onto each slice of baguette. Spoon on chopped tomatoes. Sprinkle with mozzarella.
Put in oven again for 5-7 mins until cheese is melted.
