You can sneak all sorts of vegies into this recipe. I like to make them with cabbage or with brocolli. Either way, they are a hit with adults and kids. Serve as a side or as a main dish

Ingredients

1 large chicken breast fillet
1 cup onions
1 cup brocolli (or other veg)
1/2 potato (cooked or uncooked)
1 egg
2 small slices bread (broken into small pieces)
1 tsp garlic salt (or to taste)
1/2 Tbsp Italian herbs
salt and pepper to taste
breadcrumbs
1/2 cup vegetable oil

Instructions

Grind up the chicken, onion, brocolli, and potato in a blender, or food processor until they are very finely ground up.
Remove from blender and add the herbs, garlic salt, egg, and bread to mixture and stir in.
sprinkle breadcrumbs on a plate, and add seasoning to breadcrumbs. (garlic salt, italian herbs, and pepper)
take a small amount of the mixture, and roll across the breadcrumbs with the tips of your fingers, to form sausage shaped fingers.
Fry the chicken fingers in a frying pan, over moderate heat in a little of the oil, until light brown.

Enjoy as a warm meal, or cold as a snack.
