A tasty, healthy appetizer that is wonderful for kids and adults alike. It looks classy yet, is easy to make. This dish is asparagus and turkey bacon, with Parmasean cheese, wrapped in Phyllo dough.

Ingredients

8 strips of Turkey Bacon, cooked (but not too crispy)
4 sheets of phyllo dough, cut in half lengthwise
24 stalks of asparagus, blanched (boiled for 2-3 minutes)
1/2 c. melted butter
1/2 c. finely grated parmesean cheese

Instructions

1. Fry turkey bacon until cooked, but not too crispy. It needs to be cooked, but able to wrap around asparagus.
2. Blanche asparagus 2-3 minutes. Dry off on paper towel.
3. Slice phyllo dough in half lengthwise.
4. Use pastry brush and brush lightly over each piece, entirely covering. Sprinkle parmesean cheese over.
5. Wrap one piece of turkey bacon around three stalks of asparagus.
6. Roll-up the asparagus & turkey bacon in phyllo dough, allowing the top portions of the asparagus to peek out the tops of the phyllo "blanket".
7. Brush the outsides of these rolled up blankets with more butter and sprinkle with more parmesean cheese.
8. Bake at 375 degrees for 15-18 minutes, until the "blankets" are golden brown and crispy.
