What is your favorite Recipe to Cook when Company Comes Over? I am looking for something unique and delicious!

Here are a couple of my favorites...
1) Zucchini Pie (like a quiche) - You need 4 cups chopped zucchini, 1 large onion chopped, 2 Tbsp. olive oil, 1 tsp. basil, oregano, parsley (1 of each), 12 oz shredded cheese (swiss and mozzarella work great), 2 eggs beaten, 1 tbsp. mustard, 2 pie shells. * Saute the zucchini and onion in the olive oil and add spices to the mixture. In a seperate bowl mix the cheese, eggs together. Combine the 2 mixtures. Rub the mustard onto the bottom of the pie shells. Pour the mixture into the shells (evenly). Bake at 400 degrees for 1 hour or until the top starts to brown. *

This is great because it can be made ahead of time and put in the fridge and warmed up. Serve it with a bowl of fruit and some crusty bread! YUM!!!

2) Taco Soup (given to me by my sister-in-law and so yummy!)
2 cans corn, 2 cans diced tomatoes, 2 cups cooked chicken chopped up (or can use canned chicken), 1 can of Northern White beans, 1 packet taco seasoning, 1 ranch packet dressing mix, cilantro and onion to taste. Mix all ingredients together and bring to a boil in a large pot then simmer for around 20 minutes. This great with a leafy salad and corn muffins. Easy and delicious for when company comes. Plus lots of leftovers!

Chicken Piccata is great served with pasta or rice for dinner. I even made it with quiche for my son's baptism brunch.
Floured chicken lightly fried in butter add some chicken broth, capers (usually found in the pickle or olive isle) and lemons squeezed on top. You can transfer the dish into a baking pan to reheat. The chicken is really moist and tastes original. It was a big hit the times I made it and it is pretty easy to throw together.

I don't cook much, but I made a birthday dinner for family last week and what I made turned out awesome. Go here and there is a link to the recipes. You must try the Olive Cheese Bread & the Heath Bar Dessert. Both are SO easy and quick!!!
