If your son is already 11 months old, you may just be able to start him on regular milk while you're weaning. Since they usually stop formula and move to milk at 12 months, he should be fine (unless your pediatrician has instructed you otherwise).
You might want to make sure the milk it warm, it seems to be an easier transition from the breast feeding to the bottle if the temp is similar. Hopefully he likes milk better than formula!
Have you considered pumping? I know you say you want to wean him, but you can achieve the same level of freedom (being able to go to work and school) if you pump your breastmilk. I realize you've probably thought this through, but I thought I'd throw this out there just in case. Sometimes moms think they have to give up breastfeeding if they're not home. What you're experiencing with your son -- where he seems to be eating more (and probably is) when you are tying to cut him off -- could very well be his way of saying he's not ready to give up the breastmilk yet. If this sounds at all appealing to you, check out La Leche League for tips. That's not to say this if for everyone! Pumping is hard for some moms (it was for me) and he is certainly old enough for it not to be a concern.
